Ingredients

  • 3 avocado ripe
  • 1 lime
  • 2 cups cherry tomato halved
  • ½ cup red onion thinly sliced
  • ¼ cup cilantro or parsley, chopped, fresh
  • 2 tablespoons olive oil
  • 1 clove garlic minced
  • salt to taste
  • black pepper to taste

Instructions

  1. Cut tomatoes and onions. Set aside.
  2. Cut avocados in half, remove pits and dice. Squeeze fresh lime over avocados and gently toss to combine.
  3. Add remaining ingredients and gently stir.
  4. Let stand 5-10 minutes before serving.

Notes

  • Store the salad tightly covered in the refrigerator for up to 2 days.
  • Drain any accumulated liquid before serving leftover salad to maintain texture.
  • Refresh the salad by stirring and adding a little extra lime juice and chopped fresh cilantro before serving again.
