Ingredients

  • 2 tablespoons olive oil
  • 1 yellow onion diced, medium
  • 3 cloves garlic minced
  • 2 pounds tomatoes cored and chopped, ripe
  • 3 cups vegetable broth
  • 1/4 cup basil plus more for garnish, fresh leaves
  • 1 teaspoon salt sea salt
  • 1/2 teaspoon black pepper freshly ground
  • 1/2 cup heavy cream

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add diced onions and cook until translucent, about 5 minutes.
  2. Stir in minced garlic and cook for another minute, until fragrant.
  3. Add the chopped tomatoes and vegetable broth to the pot. Bring to a simmer and cook for 30 minutes.
  4. Remove from heat. Add basil leaves, salt, and pepper. Use an immersion blender to purée the soup until smooth.
  5. Stir in heavy cream and return to low heat. Cook for an additional 10 minutes, stirring occasionally.
  6. Taste and adjust seasoning if necessary. Serve hot, garnished with fresh basil leaves.
