Tomato Bulgur Pilaf (Turkish Bulgur Pilavi)

Ingredients
- 2 tbsp olive oil
- 1 yellow onion diced
- 1 red bell pepper seeded and diced
- 2 tbsp tomato paste
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 1 1/2 cups coarse bulgur wheat rinsed
- 1 tbsp butter
- 2 cups chicken stock or water
Instructions
- In a large saucepan add the oil over medium heat. Add the onion and cook for 2 minutes, then add the red bell pepper. Cook another minute before adding the tomato paste. Cook out the tomato paste for 2 minutes and season with salt and pepper.
- Add the bulgur wheat, butter and chicken stock, stirring to combine and bring to a boil.
- Turn heat to low and cover for 20 minutes, or until all liquid has been absorbed. Fluff with a fork and serve immediately.
