Tomato Caprese Skewers with Pesto

The ultimate no-cook appetizer recipe, tomato caprese skewers are made with fresh rosemary stems and served with a pesto dipping sauce.

Ingredients

  • 16 skewers (or rosemary stems)
  • 32 tomato SUNSET Wild Wonders
  • 32 mozzarella cheese such as ciliegine, small balls
  • 32 prigs basil fresh
  • ½ cup pesto (store-bought or homemade)

Instructions

  1. If using rosemary stems as your skewer, carefully remove 75% of the sprigs to form a skewer.
  2. Working one at a time, carefully thread each skewer with one Wild Wonder tomato, one mozzarella ball, and one piece of basil. Repeat until skewer's full and continue with next skewer until they're all complete.
  3. To serve, place caprese skewers on a platter with pesto in a small bowl to act as a dipping sauce.
