Tomato Cucumber Salad with Feta and Basil

This fresh tomato and cucumber salad is made with creamy feta, bright lemon juice and fragrant basil. It tastes like summer on a plate.

Ingredients

  • 2 large tomato cut in wedges
  • 2 cups cucumber such as Persian or English, slices
  • 4 ounces feta cheese (thinly sliced or crumbled)
  • 8 prigs basil thinly slices, fresh
  • 1 tablespoon extra virgin olive oil
  • 2 tablespoons lemon juice
  • salt to taste
  • black pepper to taste

Instructions

  1. Scatter the tomatoes, cucumbers and feta cheese on a large platter. Sprinkle with fresh basil then drizzle with olive oil, lemon juice, salt and pepper. Serve family style.

Notes

  • I like to use high quality olive oil for this recipe when possible. Feel free to use whatever fresh herbs you have on hand!
