Tomato Mozzarella Salad

Easy tomato salad with mozzarella pearls tossed in with a delcious citrus herb dressing.

Ingredients

  • 1 1/2 pounds grape tomatoes or cherry tomatoes halved
  • 8 ounces mini mozzarella balls
Dressing:
  • 1/4 cup extra virgin olive oil
  • 3 tablespoons red wine vinegar
  • 1 garlic clove minced
  • 2 teaspoon honey
  • 1/4 cup fresh parsley chopped
  • 1/2 teaspoon dried oregano
  • Kosher salt and ground pepper to taste

Instructions

  1. To a small jar, add all the dressing ingredients and shake vigorously to emulsify.
  2. In a medium bowl, add the halved tomatoes and mozzarella balls.
  3. Drizzle with the prepared dressing and toss to combine.
  4. Refrigerate for at least 15 minutes to allow the flavors to meld.

Notes

  • Use any tomatoes. I highly recommend using cherry or grape tomatoes. They are sweet, crunchy, and perfect for this salad.
  • Oil: I used olive oil but other oils like grapeseed oil or avocado oil will work
  • vinegar: I used red wine, but you may use white or balsamic.
  • use fresh garlic and not garlic powder
  • fresh parsley is preferred but if in a pinch use dried parsley
