Tomato Peach Caprese Salad

This sweet and simple tomato peach Caprese salad takes all the flavors of summer and puts them in a bowl. Sweet peaches paired with heirloom tomatoes, red onion, fresh mozzarella, and basil tossed in a champagne vinaigrette.

Ingredients

For salad:
  • 4 cups cherry tomato halved
  • 4 peach pitted and sliced, ripe
  • 1 red onion thinly sliced, small
  • 12 ounces mozzarella cheese drained, small balls, fresh
  • 1/4 cup basil leaves fresh, packed
For vinaigrette:
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons champagne vinegar
  • kosher salt to taste
  • black pepper to taste

Instructions

For salad:
    Cup of Yum
  1. Add all salad ingredients to a salad bowl and toss to combine.
For vinaigrette:
  1. Add olive oil, vinegar, kosher salt, and black pepper to a small bowl and whisk vigorously until combined and emulsified.
  2. Pour over salad and toss to combine.
  3. Taste, and if needed, season with more kosher salt and black pepper.
