Tomato Peach Salad with Basil is the essence of summer. Fresh, flavourful and simple, it combines two fruits that are harvested at the same time. A perfect side for anything grilled.

Ingredients

  • ¼ cup red onion thinly sliced
  • 3 large peaches
  • 2 cups grape tomatoes halved
  • 1 cup basil leaves
  • Kosher or sea salt to taste
  • freshly ground black pepper
  • 2 tablespoon olive oil extra virgin
  • 1 ½ tablespoon white wine vinegar
  • 1 teaspoon honey

Instructions

  1. Combine peaches, tomatoes, onion, and basil in a large bowl or arrange on a platter
  2. Sprinkle with salt & pepper
  3. In a small bowl, whisk together oil, vinegar, and honey to make the dressing
  4. drizzle dressing over the salad and toss gently to combine.

Notes

  • Make this salad vegan by substituting maple syrup or agave syrup for the honey.
