Tomato, Ricotta and Basil Antipasto

A super easy and delicious twist on a Caprese appetizer.

Ingredients

  • 2 medium tomatoes (firm, sliced) preferably organic
  • ½ c ricotta cheese (top quality)
  • 1 Tbsp extra virgin olive oil
  • ⅛ tsp sea salt
  • 1 tsp basil (chopped)

Instructions

    Cup of Yum
  1. Arrange the tomato slices on a flat serving plate.
  2. Top with a small scoop (I used a melon baller) of ricotta, drizzle with extra virgin olive oil and sprinkle with the sea salt and chopped basil. Serve.

  • Use fresh, top quality ingredients for the best result.
