Ingredients
Lemon Dijon Dressing:
- 1/4 cup (60 milliliters) freshly squeezed lemon juice
- 2 tablespoon (30 milliliters) olive oil
- 2 teaspoons Dijon mustard
- 1 teaspoon granulated sugar
- 1 garlic clove peeled and finely minced
- 1/4 teaspoon salt
- 1/8 teaspoon freshly ground black pepper
To Assemble:
- 4 large heirloom tomatoes
- fresh basil leaves for garnish
- freshly ground black pepper
Instructions
To make the Lemon Dijon Dressing:
- In a medium jar, add the lemon juice, olive oil, Dijon mustard, granulated sugar, garlic, salt, and pepper.
- Seal the jar and shake well for about 30 seconds to blend together the ingredients.
- Adjust flavors to taste and set aside while you prepare the tomatoes. If not using immediately, place in the refrigerator.

To assemble the Tomato Salad:
- Cut the tomatoes crosswise into 1/4 inch (6 millimeter) thick slices.
- On a serving platter or among individual plates, arrange the tomato slices. Alternate the slices if the tomatoes are different colors.
- Whisk the salad dressing briefly to bring back together and pour over the tomato slices to taste.
- Serve immediately garnished with basil leaves and additional black pepper if desired.
