Torta de Cielo

Torta de cielo is a particularly light almond-based cake that is traditional from the Yucatan peninsula region of Mexico.

Ingredients

  • 2½ cups ground almonds
  • 1¼ cup sugar
  • 1 tablespoon flour
  • ½ teaspoon baking powder
  • 5 eggs
  • 1 teaspoon brandy (or vanilla extract)
  • 2 oz. almonds , thinly sliced
  • 2 tablespoons icing sugar

Instructions

  1. Preheat oven to 350F/180C.
  2. Combine the ground almonds, flour and baking powder.
  3. Separate the egg whites from the yolks.
  4. Beat the egg whites while gradually adding the sugar. Add the Brandy (or vanilla extract).
  5. Stir the egg yolks one by one, and then incorporate the dry mixture with a spatula.
  6. Grease a 9-inch (22cm) round cake pan or springform pan.
  7. Lightly grease the pan with oil spray, then dust it with flour and tap while holding the pan upside down to remove excess flour.
  8. Pour the batter into the pan and bake in oven for about 45 minutes.
  9. Wait about 10 minutes before unmolding it, then cool completely on a rack.
  10. Sprinkle with icing sugar, then thinly sliced almonds.
