Tortellini Soup with Sausage

Ingredients
- 1 oz pack of pre cooked sausage sliced
- 1 small onion diced
- 2 celery stalks diced
- 2 carrots diced
- 2 garlic cloves diced
- 1 oz can of tomato paste
- 1 oz can of diced tomatoes with juice
- 5 cups chicken broth gluten free if needed
- ½ teaspoon thyme
- ½ teaspoon dried basil
- ½ teaspoon oregano
- 1 package of fresh tortellini gluten free if needed
- 1 cup milk
- 1 cup spinach or kale optional
- salt and pepper to taste
Instructions
- In a dutch oven or large pot brown onions, celery, carrots and garlic in 1 tablespoon olive oil. Cook for 3-5 minutes until onions become translucent.
- Add sausage, cook for another few minutes. This sausage is precooked so just try to get a little browning on it.
- Add tomato paste, diced tomatoes, chicken broth, thyme, basil and oregeno stirring well. Bring to a boil, reduce heat and simmer over medium low for about 10 minutes.
- Stir in tortellini, cook for about 5 minutes. Be careful not to let it get too soft.
- Add milk and stir. Add more salt and pepper if needed. Add greens.
- Serve with fresh parmesan.
