Tostada Bites

This Tostada recipe is a cute Mexican appetizer perfect for any party or tailgate! Super simple and easy to make, this recipe is a keeper!

Ingredients

  • 1 tablespoon olive oil
  • 3 scallions chopped
  • 1/2 yellow bell pepper chopped
  • 1 lb lean ground beef I used 92/8 Laura's Lean Beef
  • 1 oz packet taco seasoning
  • 3/4 cup cold water
  • 24 round tortilla chips try to choose flat ones
  • 1 1/2 cups refried beans
  • 3/4 cup grated cheddar cheese
  • 2 roma tomatoes finely diced
  • 3/4 cup sour cream
  • Chopped cilantro for garnish optional

Instructions

  1. In a large skillet, heat olive oil over medium heat. Stir in scallions and yellow pepper and start to cook 2 minutes. Add in ground beef and break apart in the pan as it browns. Once completely browned, stir in taco seasoning and water. Stir to incorporate and cook until most of the water has evaporated.
  2. Heat refried beans in microwave safe bowl.
  3. To assemble, place tortilla rounds onto a serving platter. Spread about 1 tablespoon of refried beans onto each chip. Add 1 tablespoon of meat onto beans and press into the beans to help it stick. Top with grated cheese, diced tomato, sour cream and cilantro. Serve immediately.
