Trahana Soup With Feta Cheese
Traditional Greek Trahana soup is a really tasty, comfort food cooked in less than 30 minutes. Nice and thick with plenty of feta cheese melted inside!

Ingredients
- 1 cup (170 grams) Sour Trahana
- ¾ cup (140 grams) feta cheese crumbled
- 3 cups (750 ml) warm milk or chicken or vegetable stock
- 4 tablespoons (50 grams) butter
- Salt and freshly ground pepper
- Optional: ground nutmeg
Instructions
- Heat 2 tablespoons of butter in a medium-sized cooking pot.
- Saute Trahana over moderate heat for 1-2 minutes.
- Pour in the warm milk (or stock) along with 1 cup (250ml) of hot water.
- Simmer over medium-low heat (it should simmer gently not boiling) for 15-20 minutes or until soup thickens and Trahana has softened.
- Stir in most of the feta cheese (save some to sprinkle on top when serving) and once it melts take the pot off the heat. Taste and season with salt and pepper.
- Stir in the remaining butter.
- Serve hot with crumbled feta cheese, freshly ground pepper, and a pinch of nutmeg.
