Ingredients
- 1 1/2 cup trail mix
- 1 3/4 cup all purpose flour
- 2/3 cup granulated white sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon baking soda
- 2 large bananas mashed (2 medium – you need a cup of mashed bananas)
- 1/3 cup butter melted
- 2 large eggs
Instructions
- Preheat oven to 350F.
- Line a 12 hole muffin pan with paper liners.
- Combine flour, sugar, baking powder, salt and baking soda in a large bowl.
- In another bowl whisk together bananas, butter and eggs.
- Add wet mixture to the dry mixture, and blend until JUST combined.
- Fold in the Power Up Nature’s Mix, being careful not to overmix.
- Scoop into muffin cups.
- Bake 20-25 minutes or until muffins spring back when touched lightly.
- Cool slightly, remove from pan and cool on wire rack.
- Devour.
