Truffle Fries

Enjoy crispy Truffle Fries at home with this easy recipe. Featuring truffle oil and truffle salt for that distinct, irresistible truffle flavor, the fries are baked in either the air fryer or oven, and finished with a dusting of Parmesan. Serve these decadent fries with burgers, sandwiches, or salads, or as a fun cocktail-hour snack!

Ingredients

  • 4 large russet potatoes scrubbed clean
  • 3 tablespoons truffle oil
  • 1 teaspoon truffle salt
  • ½ teaspoon black pepper
  • 2 tablespoons grated Parmesan cheese
  • chopped fresh parsley for garnish
  • Optional for serving: more truffle salt if needed, different chopped fresh herbs, mayonnaise, ketchup.

Instructions

  1. Cut the potatoes into thin strips (lengthwise into 1/2" thick sticks) or wedges, depending on your preference.
  2. Place potato strips in a colander. Run cool water over them for at least 1 minute, swishing them around a bit, to wash off as much starch as possible. Place a clean, lint-free kitchen towel on the counter and transfer the potato strips to it, spreading them out in an even layer. Place another towel over the top and press to remove excess moisture very well.
  3. Place potato strips in a large bowl and add truffle oil, olive oil, truffle salt, and black pepper. Toss well to evenly coat the potato strips.
In the Oven

  1. Preheat oven to 450° F. Line a baking sheet with parchment paper.
  2. Spread seasoned potato strips in a single layer on the prepared baking sheet.
  3. Bake for 20-25 minutes, or until the fries are golden brown and crispy, flipping them halfway through. Total bake time will depend on size of potato strips and oven temperature.
  4. Remove the fries from the oven and sprinkle with grated Parmesan while they are still hot. Garnish with fresh parsley and serve immediately. 
In the Air Fryer
  1. Preheat air fryer to 400° F. 
  2. Working in batches, place the seasoned potato strips in the air fryer basket in a single layer.
  3. Cook for 18-20 minutes, or until the fries are golden brown and crispy, shaking the basket or flipping the fries halfway through. Total bake time will depend on size of potato strips and oven temperature.
  4. Remove the fries from the air fryer and transfer to a serving dish. Sprinkle with grated Parmesan while they are still hot. Garnish with fresh parsley and serve immediately.
