Tuna and Tomato Salad

Delicious light and filling tomato salad with canned Spanish bonito tuna, thinly sliced onions, and crunchy onion bits.

Ingredients

  • 2 tbsp olive oil good quality Spanish olive oil
  • 1 heirloom tomato large - 2 tomatoes if medium; sliced thin
  • ¼ red onion very thinly sliced
  • 1 tbsp balsamic vinegar
  • 1 can bonito tuna drained
  • 1 pinch salt and pepper
  • 1 tbsp fried onions

Instructions

  1. Slice the heirloom tomato (or two medium tomatoes) thinly.
  2. Arrange the tomato slices on a serving plate.
  3. Thinly slice the red onion or use pickled red onion for added flavor.
  4. Scatter the sliced onions over the tomato slices.
  5. Drain the can of Bonito Tuna and break it into chunks.
  6. Place the tuna chunks evenly over the tomatoes and onions.
  7. Drizzle the good quality Spanish olive oil over the salad.
  8. Add the tablespoon of balsamic vinegar.
  9. Sprinkle 1-2 tablespoons of fried onions over the top for added crunch.
  10. Garnish with salt and pepper to taste.
  11. Serve immediately and enjoy!
