Ingredients

  • 10 ounces chunk tuna 2 5-ounce cans, drained
  • ¼ cup finely minced red onion
  • ¼ cup diced celery
  • ⅓ cup chopped walnuts
  • Juice of 1/2 lemon
  • ¼ cup mayonnaise
  • 2 hard-boiled eggs peeled and chopped
  • sea salt to taste
  • ¼ teaspoon fresh-ground black pepper
  • Bibb lettuce leaves OR Boston or Romaine lettuce leaves
  • Sliced tomatoes and avocados optional

Instructions

  1. Combine tuna, onion, celery, walnuts, lemon juice, mayonnaise, hard-boiled eggs, sea salt, and pepper in a bowl and stir well to combine.
  2. Spoon mixture into lettuce leaves, and top with sliced tomatoes and avocados if using. Serve immediately.
