Tuna tataki

Tuna tataki features thinly seared yellowfin tuna slices drizzled with a bright citrus and soy-based sauce combining orange juice, lemon juice, mirin, and ginger. The tuna is quickly pan-seared to maintain a tender center with a lightly cooked exterior, and then sliced thinly for a delicate texture. The fresh ginger and citrus blend adds subtle zest and warmth, making it a balanced appetizer or light meal.

Ingredients

  • 1 tablespoon soy sauce
  • 1 tablespoon orange juice
  • ½ tablespoon lemon juice
  • ½ teaspoon mirin
  • ¼ teaspoon ginger freshly grated
  • 1 ½ tablespoon neutral cooking oil for frying - peanut oil or other high smoke point/flavorless best, generic cooking oil
  • ½ lb yellowfin tuna sushi grade ideally in a square/rectangular block

Instructions

  1. In a small bowl, mix together the orange juice, lemon juice, soy sauce, mirin and ginger. Set aside.
  2. If your piece of tuna is wider, cut it into two similar-sized pieces, ideally both square/rectangular ended and even width.
  3. Warm the oil in a skillet big enough for the piece of tuna over a medium-high heat until it starts to smoke slightly.
  4. Add the tuna to the pan and cook for no more than around 30-45 seconds each side to sear it. Remove from the pan and set aside a couple minutes.
  5. Using a very sharp knife, cut the tuna thinly across the grain. Arrange the slices on a larger platter or two plates to serve. Drizzle over the sauce and decorate the plate, if you like eg with slices of lemon, green onions.

Notes

  • Add a pinch of red pepper flakes to the sauce or garnish with sliced jalapeños for a mild spicy kick.
  • Including dashi or dried bonito flakes in the sauce enhances umami depth if desired.
  • Resting the sliced tuna on lemon slices before serving can increase citrus aroma and flavor.
  • Use a neutral oil with a high smoke point, such as peanut or generic cooking oil, to sear the tuna quickly without overwhelming flavors.
