Turkey Cauliflower Meatloaf

This delicious meatloaf is big on nutrition, low in carbs, fat & calories, gluten-free, but still juicy and flavourful, It's a comfort food make over.

Ingredients

  • 2 cups cooked cauliflower mashed in a colander, squeezing out as much liquid as possible
  • ½ onion diced
  • 1 cup mushrooms diced
  • 2 eggs large, lightly beaten
  • 1 tablespoon parsley chopped, or dried
  • 2 tablespoon Worcestershire sauce 
  • 1 teaspoon dried basil
  • ½ tsp salt
  • ½ teaspoon pepper
  • 1.5 lb lean ground turkey
Glaze
  • ¼ cup ketchup
  • ¼ cup mustard
  • 2 tablespoon brown sugar

Instructions

  1. Preheat oven to 400°
  2. Lightly coat a 9" loaf pan with cooking spray
  3. Whisk together the glaze ingredients & set aside.
  4. In a large bowl, combine all ingredients, mixing well.
  5. Spread meat mixture evenly in prepared pan
  6. Bake in the center of the oven for 45 minutes, then remove from oven, drain off any liquid, and coat the top of the loaf with the glaze. 
  7. Return to oven and bake a further 15 minutes, or until internal temperature is 160°
  8. Remove from oven and allow the meatloaf to rest 10 minutes before slicing and serving.

Notes

  • The cauliflower in this recipe can add a lot of moisture. You may have to drain that liquid from the meatloaf a couple of times during the baking time. But don't worry, because this meatloaf will be juicy and delicious.
