Turkey Pinwheel Sandwiches

These delicious turkey pinwheel sandwiches are easy to make, customizable and perfect school lunches or as a party appetizer.

Ingredients

  • 4 large sheets lavash bread or flatbread
  • 4 oz cream cheese softened, reduced fat
  • ¼ cup Greek yogurt plain, full fat
  • 1 ½ Tablespoons ranch seasoning mix
  • 8 oz turkey breast sliced
  • 8 lices cheddar cheese or American cheese
  • 1 cup butter lettuce
  • tomato bell pepper, carrot or cucumber matchsticks, slices, optional, veggies
  • salt to taste
  • black pepper to taste

Instructions

  1. In a small bowl, mix together the cream cheese, Greek yogurt and the ranch seasoning mix until well combined.
  2. Evenly spread a portion of the Greek yogurt ranch mixture over each lavash bread sheet, leaving a small border around the edges.
  3. Place a few slices of turkey breast over the ranch yogurt layer. Add two slices of reduced-fat cheddar cheese per lavash sheet on top of the turkey. Distribute the butter lettuce leaves on top. Sprinkle a little salt and pepper over the veggies if desired.
  4. Starting from one edge, tightly roll up each lavash sheet into a log shape.
  5. Using a sharp knife, slice each rolled lavash sheet into 1-inch thick pinwheels.
  6. Arrange the pinwheels on a serving platter and enjoy!

Notes

  • Bread: If you don’t have lavash bread, use a similar flatbread. You can also use whole wheat tortillas, flour tortillas, or large spinach wraps.
  • Cheese: You can use sliced American cheese, Swiss cheese, provolone or your preferred type of cheese. Use reduced-fat if that's what you prefer. 
  • Butter lettuce: Feel free to use baby spinach or romaine lettuce instead.
  • Swap the meat: You can use deli chicken, ham, roast beef or salami.
  • Make it dairy-free: Use a dairy-free yogurt and swap the cream cheese with a dairy-free cream cheese.
