Turkey Shepherds Pie
This Turkey Shepherd's Pie uses leftover shredded turkey combined with sautéed onion, garlic, and mixed vegetables, bound with gravy and seasoned simply. Topped with warmed mashed potatoes and grated Parmesan, the casserole is baked until the top turns golden and bubbly. The dish transforms leftovers into a comforting casserole with a creamy, slightly crusted potato layer over moist turkey filling with vegetables.
Ingredients
- 2 Tbsp olive oil
- 1 onion chopped, medium
- 3 cloves garlic minced
- 4 c. turkey shredded, leftover
- 1 c. carrot leftover diced
- 1 c. green beans leftover diced
- 1 c. peas leftover
- 2 c. gravy leftover
- 1 tsp salt
- 1/2 tsp black pepper
- 1/3 parsley chopped
- 3 c. mashed potatoes warmed, leftover
- 1/2 c. Parmesan Cheese grated
Instructions
- Preheat oven to 400 degrees.
- In a large skillet, over medium heat, heat the olive oil and saute the onions until transparent. Add garlic and saute for another minute.
- Add the vegetables and turkey. Saute with onions and garlic for one minute. Add the gravy, parsley, salt and pepper and heat for 2 minutes.
- Spread turkey filling on the bottom of a 9x13 inch baking dish. Layer the mashed potatoes on top. Sprinkle Parmesan cheese on top of potatoes.
- Bake for 30 minutes or until the top is bubbly and golden brown.
Notes
- Warm mashed potatoes before spreading to make them easier to layer evenly.
- Adding cheddar cheese with the Parmesan on top enhances the cheesy flavor if desired.
- Leftover ground beef or shredded chicken can replace turkey for variation.
- Add vegetables such as mushrooms or celery to the filling to increase flavor depth.
