Turkey Vegetable Meatloaf

Ingredients

  • 1 pound lean ground turkey
  • 1/2 cup diced yellow onion
  • 1/2 cup shredded zucchini
  • 1/2 cup shredded carrots
  • 1/2 cup old fashioned oats
  • 3/4 cup salsa
  • 1 package Knorr Vegetable Mix (1.4 ounces)
  • 3 egg whites
  • Black pepper to taste

Instructions

  1. Preheat oven to 350° F. Spray a 9x5 loaf pan with cooking spray.
  2. In a large bowl combine all of the ingredients with your hands.
  3. Pour the mixture into the loaf pan and gently press down until it is even. Bake for 60-65 minutes or until the juices run clear and cooked through, 165° F.
