Turkish Köfte

Turkish Köfte are seasoned meat patties combining ground beef and lamb with onion, garlic, parsley, and spices like cumin and cayenne. The mixture is kneaded and rested, then shaped into discs and grilled to develop flavorful charred marks, delivering a juicy, tender texture with aromatic spices typical of Turkish cuisine.

Ingredients

  • 300 g ground beef medium fat
  • 200 g ground lamb medium fat
  • 1 onion medium
  • 1 cup bread crusts removed and crumbled, stale
  • 2 tbsp parsley chopped
  • 1 clove garlic minced
  • ½ tsp cumin
  • 1 tsp cayenne pepper
  • salt to taste
  • black pepper to taste

Instructions

  1. Put the ground meat in a large mixing bowl. Grate the onion into a strainer, then press it using a silicone spatula, straining the juices over the minced meat. Then grate the garlic onto the bowl. Add the crumbled bread, salt, and spices, then knead them well together.
  2. Cover the bowl and let rest in the refrigerator for at least 1 hour or overnight.
  3. Take small pieces of the mince mixture and roll them in both palms. When you get a small ball without any cracks, pressing it with the balls of your hands into a disc shape. Repeat the process until all the mince mixture is used up.
  4. Cook the meatballs in a cast iron grill pan on medium-high heat, turning them once you have grill marks on one side, and cooking on the other side until grill marks appear. It may take 8-10 minutes for both sides to cook.
  5. Serve with grilled tomatoes and peppers.
