Ingredients

  • 2 tablespoons olive oil
  • 1 onion diced, small
  • 3 cloves garlic minced
  • 1 cup jasmine rice rinsed
  • 2 pinches cumin
  • 1 1/2 teaspoons Turmeric ground
  • 1 1/2 cups vegetable broth
  • 1 bay leaf
  • salt to taste
  • black pepper to taste
  • parsley fresh chopped for garnish

Instructions

  1. In a medium saucepan, heat olive oil over medium heat. Add onion and garlic, sauté until onion is translucent.
  2. Stir in the rinsed rice, turmeric, and cumin, coating the rice evenly with spices.
  3. Pour in the vegetable broth, add the bay leaf, and season with salt and pepper.
  4. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes or until the liquid is absorbed and rice is tender.
  5. Remove from heat, discard the bay leaf, and let sit covered for 5 minutes. Adjust seasonings if needed.
  6. Fluff with a fork before serving and sprinkle with chopped parsley.
