Ingredients
For the Cupcakes
- 13.25 ounces chocolate cake mix (1 box)
- 1 cup water
- ½ cup vegetable oil
- 3 large eggs room temperature
For the Caramel Buttercream
- ½ cup unsalted butter room temperature (1 stick)
- ¼ cup Caramel sauce
- 1 teaspoon pure vanilla extract
- ½ teaspoon coarse sea salt
- 2½ cups powdered sugar
- ½ cup roasted salted pecans
Instructions
For the Cupcakes
- Preheat oven to 350°F and line a 12-count muffin tin with paper liners. Set aside.
- Mix the cake mix, water, oil, and eggs together in a large bowl.
- Divide the batter between the prepared pan, filling each well about ¾ of the way full.
- Bake for 15-18 minutes, or until a toothpick inserted into the center comes out clean.
- Remove the cupcakes to a wire rack and cool completely before icing.

For the Caramel Buttercream
- Add the butter, caramel sauce, vanilla, and sea salt to the bowl of a stand mixer fitted with the paddle attachment. Beat on medium speed until smooth and well combined.
- With the mixer on low, slowly add the powdered sugar.
- Once all of the powdered sugar has been added, turn the mixer to high speed and beat until the icing becomes light and fluffy, about 2 minutes.
- Transfer the frosting to a piping bag fitted with your choice of tip.
- To assemble, scoop a small hole from the center of each cupcake and fill it with pecans. Then, pipe the frosting on top and enjoy.
Notes
- Storage: Store turtle cupcakes in an airtight container at room temperature for up to 2 days or in the refrigerator for up to 4 days.
