Tuscan Pasta with Sausage

Ingredients

  • 8 oz penne pasta dry
  • 1 lb Italian sausage
  • 2 cloves garlic minced
  • 1 (14.5 oz) can diced tomatoes, drained
  • 2 cups heavy cream
  • 1/2 cup freshly grated Parmesan cheese plus more for serving
  • salt and pepper to taste
  • 2 cups baby spinach torn

Instructions

  1. Bring a large pot of water to a boil. Salt generously, then add the pasta and cook until al dente. Drain and reserve.
  2. Meanwhile, place a large skillet over medium heat. Remove the casings from the sausage and add to the skillet, breaking it up as you add it. Cook the sausage until browned, then add in the garlic and cook for another 30 seconds.
  3. Stir in the tomatoes, cream, and 1/2 cup parmesan cheese. Season to taste with salt and pepper. Let the sauce cook until it has thickened slightly, about 5 minutes.
  4. Add in the cooked pasta and the spinach and cook until the pasta is heated through and the spinach has wilted.
  5. Serve garnished with additional parmesan cheese.
