Ingredients

Green layer:
  • ½ avocado
  • baby spinach handful
  • 1 tablespoon mint leaf chopped, fresh
  • 140 ml coconut water
Pink Layer:
  • 120 g raspberries frozen
  • 100 ml coconut water
Orange Layer:
  • 1 carrot peeled and chopped into chunks, medium
  • 1 teaspoon ginger grated, fresh
  • 100 ml orange juice fresh
  • ½ banana

Instructions

  1. Start with the green layer of the smoothie. In a powerful blender, (such as Vitamix) place avocado, spinach, mint and coconut water. Blend until smooth and pour into a glass.
  2. Rinse the blender, and fold in frozen raspberries and coconut water. Blend until frothy and pour over the green smoothie.
  3. Rinse the blender once again, and fold in carrot, ginger and orange juice. Blend until completely puréed, then fold in the banana and blend again until smooth. Pour over the other two smoothie layers and serve immediately. Enjoy!
