Ingredients

  • 4 baking potato large
  • 8 lices Bacon
  • 1 cup sour cream
  • 1/2 cup milk
  • 4 tablespoons butter
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cheddar cheese divided, shredded
  • 8 green onions sliced, divided

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C) and gather all your ingredients.
  2. Place the potatoes in the oven and bake until they are tender, which should take about 1 hour.
  3. Cook the bacon in a skillet over medium-high heat until it's evenly browned, then drain and crumble it.
  4. Cut the potatoes in half lengthwise and scoop out the insides into a bowl, keeping the skins intact.
  5. Combine the scooped potato with sour cream, milk, butter, salt, pepper, half of the cheese, and half of the green onions. Blend until creamy using a hand mixer.
  6. Fill the potato skins with the creamy mixture, then sprinkle the remaining cheese, green onions, and bacon on top.
  7. Bake the filled skins in the oven until the cheese has melted, which will take about 15 minutes.
  8. DEVOUR!
