Ube Crinkle Cookies

These ube crinkle cookies turn the nutty, vanilla flavor of ube into a chewy crinkle cookie for a unusual purple twist on a classic.

Ingredients

  • 2 cups all-purpose flour
  • 1½ teaspoons baking powder
  • ¼ teaspoon salt
  • ¾ cup granulated sugar plus more if doing a double roll, 150 grams
  • 1 egg large
  • 8 tablespoons butter unsalted, melted and slightly cooled, 113 grams
  • 2 teaspoons ube extract
  • ½ cup ube halaya ube jam
  • ½ cup powdered sugar plus more if needed

Instructions

  1. Sift or whisk the flour, baking powder, and salt together in a small to medium-sized bowl.
  2. In a medium bowl if using a hand mixer or in the bowl of your stand mixer, mix the sugar and egg together on medium speed until it is light in color, 1 to 2 minutes.
  3. Add the melted butter and ube extract and mix together for 1 minute.
  4. Add the ube halaya and mix.
  5. Add the dry ingredients and mix on low or stir in by hand just until they are fully incorporated.
  6. Chill the cookie dough in the refrigerator for 30 to 60 minutes.
  7. Meanwhile, preheat your oven to 350°F and ready a small bowl of powdered sugar and two cookie sheets lined with parchment paper or silicone mats. If doing the double dip, ready a second small bowl with about one-half cup of granulated sugar.
  8. Use a medium (#40) cookie scoop or two spoons to scoop balls of dough one at a time into the granulated sugar first, if using, and then the powdered sugar. Toss to coat thickly and place on the baking sheets about two inches apart.
  9. Bake for 10 to 12 minutes in the middle of the oven. The cookies will be slightly firm to touch but the inside will look soft.
  10. Let cool for about 5 minutes on the baking sheet before transferring them to a rack to cool completely.
  11. Crinkle cookies can be stored for a week at room temperature.

Notes

  • Chilling for a short time helps you scoop the crinkle cookie balls, but do not chill for too long or they will be hard to scoop.
  • Rolling the cookies first in granulated sugar helps keep the powdered sugar from melting into the purple cookie.
  • Crinkle cookies can be stored at room temperature, but they are best eaten within a day because the confectioners' sugar may melt into the cookie over time.
