Uborka Saláta

Uborka saláta is a traditional Hungarian salad that is typically served as a side dish, often accompanying rich dishes like goulash.

Ingredients

  • 2 English cucumbers , peeled
  • ½ onion , finely chopped
  • 3 tablespoons white vinegar
  • 1 tablespoon sugar
  • 2 tablespoons salt
  • 1 tablespoon paprika
  • 2 tablespoons sour cream

Instructions

  1. Cut the peeled cucumber into very thin slices, preferably with a mandoline.
  2. Add salt. Mix well and set aside for at least an hour.
  3. Drain the cucumber in a colander. Squeeze the cucumber with your hands if necessary.
  4. In a bowl, combine the vinegar, sugar and onion. Some add a little water or some of the cucumber water.
  5. Pour over cucumbers.
  6. Garnish with sour cream and sprinkle with paprika.
  7. This salad (without the cream) can be stored in the refrigerator for a few days.
