Ultimate Vegan Fry Up (Full English Breakfast)

Ingredients

  • 1 tbsp vegan butter
  • 2 button mushrooms
  • 1 tomato
  • ½ cup baked beans (make sure to use British-style baked beans, such as Heinz Beanz)
  • 1 lice toast or fried bread
  • 2 vegan breakfast patties (such as Beyond Breakfast Patties, Impossible Sausage Patties, or MorningStar Sausage Patties)
  • 2 lices vegan bacon (such as Lightlife Smart Bacon or Tempeh Bacon)
  • 2 links Vegan Breakfast Sausage (such as Beyond Breakfast Sausage Links, Field Roast Breakfast Sausage, or Jack & Annie’s Breakfast Sausage)
  • ½ recipe Homemade Tofu Scramble (or 1 Fried Tofu Egg, or 1/2 bottle Just Egg)
  • ketchup or HP sauce to serve

Instructions

  1. First, if using homemade baked beans and eggs, make these first and have them ready to go before you start the rest of the recipe. You can also prepare them a day ahead of time and store in the fridge until you're ready to assemble the dish.
  2. Slice the tomato in half and sprinkle with salt and pepper. Put a little bit of butter on each slice and slide them under the broiler until they’re hot and steaming and soft, but still hold their shape. Set aside.
  3. Melt vegan butter in a large skillet on medium-high heat. Add the breakfast patties, sausages, and bacon and fry, turning occasionally, until browned on all sides.
  4. Meanwhile, chop the button mushrooms into quarters.
  5. Make some space in the middle of the pan and throw down a slice of bread. Beside it, add the chopped mushrooms. Turn down the heat and gently sauté the mushrooms until they are cooked. Flip the bread halfway through so that both sides are golden brown.
  6. Transfer all ingredients to a large plate and serve with some ketchup or HP sauce on the side.
