Umami Seasoning

This umami seasoning is a coarse salt blend infused with finely ground konbu seaweed and dried shiitake mushrooms. The mixture adds a concentrated umami boost to dishes, lending depth from the seaweed and earthy mushroom flavors without additional wet ingredients.

Ingredients

  • 5 grams konbu
  • 3 grams dried shiitake mushrooms (stems removed)
  • 150 grams salt (~½ cup)

Instructions

  1. Break the konbu and shiitake mushrooms into small pieces and add them to a spice grinder, blender, or food processor. Run until the ingredients have been ground into a fine powder.
  2. Pour the mixture into a bowl with the salt and mix to combine.
  3. Store the umami seasoning salt in a sealed container.
