Vanilla and Chocolate Protein Popsicles

These Vanilla and Chocolate Protein Popsicles sound almost too good to be true! Delicious vanilla and chocolate swirled layers, but without any added sugar. They are vegan, gluten-free, and loaded with protein. Perfect summer treat! EASY - This recipe is very easy to make since there is no cooking involved either. It's a great way to turn protein shakes into delicious treats. There is an overnight freezing step in this recipe.

Ingredients

Vanilla Layer
  • 1 cup almond milk unsweetened
  • ⅓ cup protein powder I use 2 scoops of vanilla flavored Bob’s Red Mill Nutritional Booster powders, vanilla flavored
  • 1 banana or ⅓ cup coconut yogurt
  • 2 dates add more for more sweetness
  • Pinch salt sea salt
Chocolate Layer
  • 1 cup almond milk unsweetened

  • 1 banana or ⅓ cup coconut yogurt
  • 2 dates add more if you want more sweetness

Instructions

Vanilla Layer

  1. Place all the ingredients in a blender and blend until smooth. Pour into a jug and set aside.
Chocolate Layer
  1. Place all the ingredients in a blender and blend until smooth. Pour into a separate jug and set aside.
Vanilla and Chocolate Popsicles
  1. Prepare 10 x 3 fl oz (89mL) popsicle molds. Fill each mold half-way with the vanilla smoothie. Freeze this layer for about 30 min - 1 hour (just to partially freeze the layer. This will ensure that the chocolate layer won't sink and mix with the vanilla layer).
  2. Pour the chocolate smoothie layer over the semi-frozen vanilla smoothie layer. Using a skewer or extra popsicle stick, gently swirl the two layers.
  3. Insert the popsicle sticks, and freeze for at least 6 hours to completely freeze the popsicles.
  4. Dip the popsicle molds in hot water for a few seconds (or under running hot water), to make it easier to unmold them. Place the un-molded popsicles in zipper bags and in the freezer for whenever you need a delicious and healthy snack!
