Vanilla Chai Baked Oatmeal

Loaded with spices, toasted pecans, sweet raisins & vanilla and sweetened with maple syrup, this Vanilla Chai Baked Oatmeal with steel cut oats is sure to change the way you feel about oatmeal!

Ingredients

Porridge:
  • 1 cup steel cut oats *
  • 2/3 cup toasted pecans finely chopped
  • 2 tablespoons maple syrup
  • 2 teaspoons chai spice mix
  • pinch of salt
  • ½ cup raisins optional
  • 2 cups milk
  • ½ cup cream or sub more milk instead
  • 2 teaspoons vanilla
  • 2 tablespoons butter melted
Cinnamon Sugar Topping:
  • 2 tablespoons granulated sugar
  • ¼ teaspoon cinnamon

Instructions

  1. Preheat oven to 350 degrees & grease a 9 or 10 inch round baking dish. I just used a deep dish pie plate.
  2. In a large bowl, combine steel cut oats, toasted pecans, maple syrup, spices, and raisins. Mix to combine. Pour in milk, cream, vanilla and melted butter & stir to combine. Pour mixture into prepared baking dish.
  3. Mix together cinnamon sugar mixture. Sprinkle evenly over the porridge mixture. Place dish in the center of your oven and bake for 55-60 minutes. The top will be golden brown and crispy.
  4. Remove from oven and distribute among bowls. Serve with your favourite toppings such as milk, cream, a drizzle of maple syrup, fresh fruit etc.

Notes

  • * Note: you could substitute rolled oats, but just make sure you cut down your baking time to about 30-40 minutes as it will cook much faster
