Vegan Almond Biscotti (Eggless Recipe)

Ingredients

  • 90 g Vegan block butter, softened (⅜ cup)
  • 110 g caster sugar (½ cup + 1 tablespoon)
  • ½ Teaspoon almond extract
  • ½ Teaspoon vanilla extract
  • 3 Tablespoons unsweetened soy milk
  • 200 g plain flour (~1+½ cups)
  • 1 Teaspoon baking powder
  • 120 g chopped almonds (~1 cup)

Notes

  • Store in an airtight container at room temperature for up to 10 days.
  • Don't attempt to cut the vegan biscotti logs while too hot or too cold as they will crumble. Around 20 minutes of cooling time is just right.
