Vegan Apple Oatmeal Cookies

Vegan Apple Oatmeal Cookies blend oats, diced apples, and warming cinnamon into a cookie with crunchy edges and a soft center. Coconut oil and brown sugar provide sweetness and moisture, while flaxseed meal replaces eggs as a binder. These cookies offer a tender yet textured bite, ideal as a sweet snack or lunchbox treat. The diced apples add natural fruit sweetness and moisture for a chewy finish.

Ingredients

  • ⅓ cup coconut oil
  • ¾ cup brown sugar
  • 1 tsp vanilla extract
  • 1 tbsp flaxseed meal + 3 tbsp water
  • ¾ cup all-purpose flour
  • ½ tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • 1 cup rolled oats
  • 1 cup apple diced
  • ½ cup oat flour or rolled oats blended to flour

Instructions

    Cup of Yum
  1. Pre-heat oven to 350°F. Line a baking tray with parchment paper.
  2. Prepare the flaxseed egg by mixing one tablespoon of flaxseed with 3 tablespoons of water. Let it sit for ten minutes.
  3. In a large mixing bowl, stir together melted coconut oil, brown sugar, and vanilla extract until combined.
  4. Add flaxseed egg and stir again.
  5. In a different bowl, mix all-purpose flour with cinnamon, baking powder, and salt. Add that blend to the first mixing bowl and stir until combined.
  6. Add rolled oats and oat flour, then stir to combine. Quick Tip: Oat flour can be easily made by blending rolled oats for two minutes.
  7. Add diced apple.
  8. Stir to incorporate.
  9. Spoon the dough into 12–14 cookies, leaving two inches in between them on the baking sheet. The dough will be sticky due to the flaxseed but easy to work with.
  10. Bake the cookies for 12–15 minutes or until golden on the edges.
  11. Let cookies cool down before serving.

Notes

  • Store the cookies in an airtight container at room temperature for up to 3 days or freeze for up to 2 months to keep them fresh.
  • Rolled oats give a crunchier texture than quick oats, which yield softer cookies.
  • These cookies are suitable for meal prep or packing as a school or work lunch snack.
  • The cinnamon and sweet apple combination offers a warm, comforting flavor with a crisp edge and soft center.
  • Flaxseed meal substitution makes these cookies fully vegan while maintaining structure.
