Ingredients
- 2 medium ripe avocados 1.5 cups mashed avocado
- 2 tablespoon cocoa powder I have used unsweetened.
- ¼ cup maple syrup
- ½ cup soy milk adjust as per the consistency needed
- 1 teaspoon pumpkin seeds
Instructions
- Cut the ripe avocados in half, remove the pit, and scoop the flesh into a blender.
- Add the unsweetened cocoa powder and pumpkin seeds to the blender with the avocado. Then gradually add soy milk and maple syrup to the blender.
- Blend all the ingredients together until the mixture is completely smooth and creamy.
- Transfer the mousse to serving bowls and chill in the refrigerator for at least half an hr.
- Top with strawberry or cherry before serving for added crunch and flavor. Enjoy your vegan avocado mousse!

Notes
- Blend until completely smooth to avoid any lumps from the avocado. You may use high-speed food processor for best results.
- Adjust sweetness with maple syrup to taste as this is mild sweet.
- Add a pinch of salt to enhance the chocolate flavor.
- Store the leftovers in an airtight container in the refrigerator. It will keep for up to 4-5 days. For best texture, avoid freezing, as it may affect the creaminess.
