Vegan Avocado Chocolate Mousse

Ingredients

  • 2 medium ripe avocados 1.5 cups mashed avocado
  • 2 tablespoon cocoa powder I have used unsweetened.
  • ¼ cup maple syrup
  • ½ cup soy milk adjust as per the consistency needed
  • 1 teaspoon pumpkin seeds

Instructions

  1. Cut the ripe avocados in half, remove the pit, and scoop the flesh into a blender.
  2. Add the unsweetened cocoa powder and pumpkin seeds to the blender with the avocado. Then gradually add soy milk and maple syrup to the blender.
  3. Blend all the ingredients together until the mixture is completely smooth and creamy.
  4. Transfer the mousse to serving bowls and chill in the refrigerator for at least half an hr.
  5. Top with strawberry or cherry before serving for added crunch and flavor. Enjoy your vegan avocado mousse!

Notes

  • Blend until completely smooth to avoid any lumps from the avocado. You may use high-speed food processor for best results.
  • Adjust sweetness with maple syrup to taste as this is mild sweet.
  • Add a pinch of salt to enhance the chocolate flavor.
  • Store the leftovers in an airtight container in the refrigerator. It will keep for up to 4-5 days. For best texture, avoid freezing, as it may affect the creaminess.
