Vegan Baked Oatmeal

This vegan baked oatmeal with peanut butter and chocolate is so dang good, it's hard to tell if it's dessert or breakfast.

Ingredients

  • 2 bananas mashed
  • 1/4 cup maple syrup or honey
  • 1/4 cup peanut butter
  • 2 tsp vanilla
  • 2 flax eggs or regular eggs
  • 3 cups of oats
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 3 cups of plant milk
  • 1/2 cup - 1 cup dark chocolate

Instructions

  1. Preheat oven to 350F and grease a 9X13 inch baking dish.
  2. In the dish, mash the bananas till well combined and add in the maple syrup, peanut butter, vanilla and flax eggs.  Stir till combined.
  3. To the dish, add the oats, baking soda, salt and plant milk. Stir till there are no clumps and a smooth consistency has developed.
  4. Top with chocolate before baking.
  5. Bake in the middle rack for 28-35 minutes.  If you want more oatmeal like consistency, bake for less time.  You want more of a bar texture bake a bit longer.  You can eat immediately or after cooling.
  6. Enjoy them with fresh berries and bananas.

Notes

  • Leftover overs will last in the fridge for 5-7 days.
  • You can slice them into pieces and store in a tightly sealed container in the freezer for up to 1-2 months.  To prepare, simply reheat in the oven or microwave.
