Vegan Bean Chili [Slow Cooker, Instant Pot, Stove]

This Vegan Bean Chili features a variety of canned beans combined with diced vegetables, tomato paste, and seasonings like cumin and chili powder. It can be cooked slowly in a crock pot, quickly pressured in an Instant Pot, or on the stove. The blend of black, pinto, kidney, and garbanzo beans with tomatoes and bell pepper creates a hearty, textured chili. The addition of grated zucchini and corn adds subtle sweetness and moisture. The spice mix lends warm, earthy flavor, making it a filling vegan meal option.
