Ingredients

  • 15 oz black beans canned
  • ½ Cup vegan chocolate chips + Extra for Topping
  • ½ Cup sugar
  • ½ Cup oil
  • ½ Cup quick oats
  • 2 Tablespoons cocoa powder
  • 2 Tablespoons water
  • 1 Tablespoon vanilla extract
  • 1 Teaspoon salt
  • 1 Teaspoon baking powder

Instructions

  1. Preheat the oven to 350 degrees and spray a 1-quart, rectangle, deep baking dish with nonstick spray.
  2. Combine all the ingredients except the chocolate chips into a food processor and blend until smooth.
  3. Fold the chocolate chips into the mixture except the extra for topping.
  4. Pour into the prepared dish and spread evenly. Top with the extra chocolate chips.
  5. Bake for 20 minutes or until a toothpick comes out mostly clean.
  6. Remove and place in the fridge for 2 hours or until firmed up. Enjoy!
