Vegan Bounty Bars - Just 4 Ingredients!
These vegan bounty bars combine desiccated coconut with the creamy solid part of coconut milk and maple syrup, shaped into logs then coated in dark or vegan milk chocolate. The bars have a firm, moist coconut center wrapped in a thin chocolate layer, offering a homemade alternative to classic coconut chocolate bars with a straightforward four-ingredient recipe.
Ingredients
- 7 oz coconut 200 gr, desiccated shredded
- ¾ can coconut milk discard the watery part, full-fat
- 2 tablespoon maple syrup
- 7 oz dark chocolate 200 gr, 70% organic, or vegan milk chocolate
Instructions
- In a food processor add desiccated coconut, coconut milk and maple syrup.
- Mix for 30 seconds or until combined, scraping down the mixture with a spatula if necessary.
- Shape the mixture into small logs and arrange them on a baking tray covered with parchment. Refrigerate for 1 hour in the fridge, or in the freezer for 10-15 min.
- In the meantime melt the chocolate in the microwave, or in a heat-proof bowl over a pan filled with simmering water. Once melted allow to cool slightly.
- Dip each bounty bar into melted chocolate and arrange on a cooling rack.
- Make sure you put some parchment paper beneath the rack to catch the chocolate in excess.
- Allow your bounty bars to set then serve.
- Store in the fridge for up to 5 days.
Notes
- Do not shake the coconut milk can; only use the solid part and discard the watery portion for best results.
- Chill the shaped coconut logs well before dipping to make coating easier and cleaner.
- Store the finished bars in the refrigerator; they keep for up to five days.
