Vegan Calzones (Homemade Vegan Pizza Dough)

Ingredients

Pizza Crust:
  • .25 ounce yeast packet
  • 1 teaspoon sugar
  • 1 cup water warm
  • 2 Tablespoons olive oil
  • 2 ½ cups all-purpose flour or whole wheat flour, more for rolling
  • 1 teaspoon salt
Calzone:
  • ½ jar marinara sauce ~13 ounces
  • ½ cup red bell pepper or green bell pepper, chopped
  • ½ cup red onion about ½ medium onion, diced, or white or yellow onion
  • 1 can black olives 2.25 ounces, sliced, drained
Optional Additions:
  • 4 vegan chick'n strips baked and chopped
  • 1 cup vegan cheese
  • ½ cup crimini mushrooms chopped

Instructions

  1. Preheat oven to 425 degrees.
  2. To assemble the pizza dough: In a large bowl, dissolve yeast and sugar in warm water. Let it about 10 minutes or until it turns foamy.
  3. Add olive, flour, and salt and mix well. Remove the dough and knead it more flour to prevent sticking. Let sit for about 10 minutes.
  4. Divide the pizza dough into 3 or 4 balls, depending on the size of the calzones you’d like.
  5. On a well-floured surface (I prefer using two baking sheets rather than my countertop), take each ball and roll it out into a circle.
  6. Place 1/2 cup marinara sauce on the middle of each piece of dough, leaving a 1-inch space from the edge.
  7. Place the bell pepper, onion, and olives over the sauce. Fold each piece of dough in half, fold the edges over, and pinch the edges together.
  8. Bake for 15 to 20 minutes or until the calzones are golden brown. Remove from the oven and cool.

Notes

  • Use warm water that is comfortable to the touch but not hot to activate yeast without killing it.
  • Roll dough on a well-floured surface or baking sheets to prevent sticking during shaping and baking.
  • Bake calzones until they turn golden brown for both crispness and thorough cooking.
