Vegan Caramelized Onion and Pear Naan Grilled Cheese

Ingredients

For the caramelized onions
  • 2 onion peeled and sliced with the grain in slivers, for cooking
  • 1 tbsp vegetable oil canola or sunflower oil probably would be best, of your choice
  • water optional
For the naan grilled cheese
  • vegan butter for the pan
  • 1 piece naan bread per sandwich
  • 2 lices vegan cheese per sandwich
  • 1 pear cored, quartered and sliced thinly, California Bartlett variety

Instructions

Caramelized Onions

  1. To make the onions, in a pan, cook sliced onions with vegetable oil and cook covered over medium heat. Once translucent, lower heat to a medium low, and cook covered stirring every 3-4 minutes until onions are evenly browned. This should take about 25 minutes.
  2. Once caramelized, remove from pan and transfer to a container.
For the grilled cheese
  1. Cut a piece of naan bread in half, putting the flatter side on the outside of the sandwich.
  2. Melt about 1-2 tsp of vegan butter on a pan and preheat over medium heat.
  3. On a cutting board, layer vegan cheese, caramelized onions, sliced California Bartlett pear and one more slice of vegan cheese, then the other side of the naan bread.
  4. Cook on the pan for about 3-4 min, lowering heat to medium low, covered, until one side is browned. Flip and cook covered again until both sides are browned and cheese is melted through.
  5. Serve immediately, and enjoy!
