Vegan Chocolate Covered Cookie Dough Bites

Take the worry out of eating raw cookie dough with this delicious healthy, safe option!

Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon chia seeds
  • 1 teaspoon Flaxseed ground
  • tiny pinch kosher salt
  • 3 Tablespoons maple syrup
  • 2 Tablespoons coconut oil melted
  • 1 teaspoon vanilla extract
  • 1/3 cup mini chocolate chips

Instructions

  1. Add flour to a small microwave safe bowl. Heat for 30 seconds and mix, heat for another 30 seconds, and mix, and heat for a final 30 seconds. This should bring your flour up to 165 degrees. To be sure, use an instant read thermometer.
  2. In a medium sized bowl, add the heated flour, salt, chia seeds, flaxseed and give quick mix.
  3. Add melted coconut oil, maple syrup, and vanilla extract to a small bowl or pour spout Pyrek, and whisk.
  4. Add liquid ingredients to the bowl with flour and mix well until it's all combined into a smooth dough. Add bowl to fridge for a few minutes to slightly cool the flour, otherwise if it's too warm, it may melt your chocolate chips.
  5. Once cool, fold in chocolate chips.
  6. Roll out into 12-13 small balls.
  7. Enjoy!

Notes

  • Chocolate Chips - Make this recipe vegan or gluten-free by using vegan/gluten-free mini chocolate chips.
  • Flaxseed - Use ground or whole flaxseed.
