Vegan Chocolate Pie
This easy vegan chocolate pie is made with tofu instead of dairy or eggs. Made with just 4 simple ingredients the filling is rich, creamy and absolutely delicious.
Ingredients
- pie crust I used Wholly Wholesome frozen pie crust, of choice
- 14 ounces tofu firm
- 1 ounce chocolate chips I used Enjoy Life, vegan, in a bag
- ½ cup almond milk unsweetened vanilla
- ½ cup maple syrup
- Coconut whipped cream for topping (optional
Instructions
- Baked pie crust as directed on the package. Remove and let cool while you make the filling.
- Melt chocolate in a microwave-safe container for about 2-3 minutes, stirring every 30 seconds until completely melted. Set aside to cool for 1-2 minutes.
- Add melted chocolate, tofu, almond milk and maple syrup to food processor or high powered blender and blend until smooth.
- Pour filling into pie crust and smooth out top with a spatula. Place in fridge to firm up for 12 hours, or overnight.
- Once ready to serve, take a sharp knife and run it under the faucet to get it wet. Cut pie and serve with a dollop of coconut whip cream. Enjoy!
