Vegan Cream of Mushroom Soup
This Vegan Cream of Mushroom Soup features sautéed mushrooms, red onion, and garlic cooked into a creamy base using vegan butter, flour, and coconut milk. Ingredients
- 8 Ounces mushrooms sliced
- ½ red onion large, diced
- 5 Cloves garlic minced
- 2 Tablespoons vegan butter or olive oil
- ¼ Cup flour
- 13 Ounces coconut milk full fat
- 1 ½ Cups vegetable broth
- salt to taste, sea salt
- black pepper to taste, freshly ground
Instructions
- In a large pot, melt the vegan butter and then saute the mushrooms, onion, and garlic until the onion is translucent (about 5 minutes).
- Sprinkle the flour over the ingredients in the pot, then stir until the flour has soaked up the juices.
- Add in the vegetable broth and coconut milk. Stir, and simmer for about 15 minutes.
- Remove from the heat and allow to cool a bit in order to further thicken. Serve.
