Vegan Dark Chocolate Mousse

Ingredients

  • 4 whole ripe avocados peeled and pitted (weighing about 1 1/2 lbs unpeeled)
  • 1/2 cup cocoa powder
  • 4 ounces dairy free dark chocolate, melted double check to make sure it is dairy free
  • 1/4 teaspoon cinnamon Ceylon cinnamon is best
  • 1/4 heaping teaspoon salt
  • 1/2 cup agave or 3/4 cup granulated white sugar or natural sweetener of your choice (add more or less to taste if desired)
  • 1 tablespoon vanilla
  • Raspberries and fresh mint leaves (optional garnish)

Instructions

  1. In the bowl of a food processor, combine all ingredients and process until smooth. 
  2. Divide into bowls or dessert dishes and chill until ready to serve, at least 2 hours. Garnish with raspberries and fresh mint leaves, if desired.
