Ingredients
- 1/2 cup almond butter or 1 cup of whole Almonds
- 1 cup pitted whole dates (scant cup, not packed)
- 1 flax/chia egg ( 1 tablespoon each flax powder and chia seeds mixed with 1 tablespoon of water)
- 1 teaspoon cinnamon
- 1/2 teaspoon baking powder
- 1 cup oats (any type)
- 1/2 cup Crushed pecans (hazelnuts, almonds, walnuts or a mixture)
- 1/3 cup raisins
Notes
- Instead of almond butter, you can just process a cup of almonds in your food processor, adding the dates as you pulse.
- Store-bought flax eggs work well here, but I like to make them myself by mixing 1 tbsp each of ground flax seeds and chia with 1 tbsp of water.
- Feel free to add cranberries, chocolate chips and any chopped nuts to the cookie batter!
