Ingredients

  • 15 ripe plums, pitted and chopped
  • ¾ cup of brown sugar, plus more for sprinkling on top
  • ½ cup of all-purpose flour
  • ½ cup of quick oats
  • ½ teaspoon of salt
  • ½ teaspoon of allspice
  • ¼ teaspoon of cinnamon
  • 1 teaspoon of vanilla extract
  • ½ cup melted vegan butter

Instructions

  1. Preheat the oven to 350 degrees F and grease a baking 8x8 dish.
  2. Place the chopped plums in the prepared baking dish and mix in ¼ of the brown sugar.
  3. In a separate bowl, combine the flour, oats, salt, allspice, cinnamon, vanilla, and melted butter. Mix until well-combined.
  4. Spoon the oat mixture onto the plums and spread evenly. Sprinkle with more brown sugar (optional).
  5. Place in the oven and bake for 40 minutes.

Notes

  • If you have tart plums, feel free to use 1 cup of sugar instead of ¾ cup. If you have really sweet plums, feel free to go down to ½ a cup.
  • Tastes great with vegan vanilla ice cream.
  • This dish is best served fresh but can be stored in an airtight container in the refrigerator for 3 days.
